Perfect Taco Salad

I’m a vegetarian, but my husband loves meat.  I am always on the lookout for dinner entrees where I can make one dish and we both can enjoy the same meal.  This taco salad is one of my favorite meals because I can make one big salad for us to share, and just add a piece of seasoned chicken to his portion.

I also usually prefer to make my own salad dressing, but I have found a new bottled dressing that goes perfectly with the flavors in this salad.  One less step means this is a perfect weeknight meal for busy families!

Perfect Taco Salad

2 servings

Ingredients:

1 heart of romaine, chopped into bite size pieces

1 roma tomato, diced

3 scallians, sliced

1/2 cup canned black beans, drained and rinsed

1/4 cup canned shoepeg corn, drained

1/4 cucumber, diced

1/2 cup cheddar cheese, shredded

1/4 cup corn chips, slightly crushed

Wishbone Chipotle Ranch dressing

OPTIONAL:

1 chicken breast, season with 1/4 teas cumin and 1 teas chili powder.  Saute in 1 Tablespoon olive oil.

  1. I am always loonikg for new summer salads – since it is so very hot here. I am pinning this one, because I’d love to try it. I’ll have to modify it a bit, since we don’t get all of those ingredients here…but I am sure it will be a hit. Stopping by from Proverbs 31 Wife
