Spinach Alfredo Pasta
Alfredo sauce is one of my favorite guilty pleasures. Unfortunately, it isn’t very healthy! I prefer to make my own at home, as opposed to ordering it from a restaurant, so I can control the amount of fat I use in my ingredients.
I absolutely love this recipe I found on Pinterest that is supposedly a copycat recipe from Olive Garden. I originally added the spinach in an attempt to make the dish a little healthier and also add some extra flavor. I love it even more with the spinach! I have also made it with broccoli, which is also a delicious option!
Spinach Alfredo Pasta
(adapted from this recipe)
1. Cook pasta til al dente. While pasta is cooking, make the sauce.
2. In a large saucepan, melt butter over medium heat. Add garlic and cook for two minutes, then add heavy cream and cream cheese. Heat until sauce is slightly bubbling, but not boiling.
3. Add Parmesan cheese, spinach, nutmeg, salt and pepper. Cook until spinach starts to wilt. Add cooked pasta to Alfredo sauce and serve.
